Black Mustard Seeds, also known as Brown Mustard Seeds are one of over 40 different varieties of mustard plants. The other most popular are white mustard seeds and Yellow Mustard Seeds. In Europe, black mustard seeds are primarily used to produce Dijon mustard, whereas in Asia it is used to create mustard oil.
Despite their primary use in creating mustard, these seeds can often be found in Indian Cuisines. They use mustard seeds for spice and texture. Black Mustard Seeds are the most powerful of the three seeds and are often fried or toasted and then added to a dish along with other aromatic ingredients.
Black Mustard Seeds originate from the Mediterranean region, where the ancient Romans would ground the seeds up into a paste, similar to the mustard used in modern times. In 13th Century France, the seeds were ground down and mixed with fermented grape juice to create the mustard we know today.
