Country Products Cherry and Coconut Flapjack Recipe

Try the Country Products Cherry and Coconut Flapjack recipe. Quick, easy and tasty!

If you are feeling slightly more indulgent, drizzle with some dark melted dark chocolate.

Ingredients

100g Margarine or butter

3 tbsp golden syrup

100g Demerera sugar

160g Porridge Oats

40g Dessicated Coconut

1 tsp almond extract (brings out the cherry flavour)

80g Glace cherries chopped (I used Mixed coloured Cherries)

Makes 16 pieces

Baking Method

For this recipe I used a square baking tin about 18cmx18cm.

Line the tin with baking parchment or similar and preheat your oven to 180 degrees.

Melt the margarine/butter and golden syrup in a saucepan, but don’t allow the mixture to boil.

Take if off the heat and stir in the sugar, dessicated coconut and finally the oats, extract and cherries. Mix well so all the dry ingredients have absorbed the wet ingredients.

Fill your prepared tin with the mixture and press down with the back of a spoon or palette knife.

Bake in the oven for 20 minutes until golden brown.

Top Tip

Leave for 5 minutes to cool then with a sharp knife mark 16 pieces while still in the baking tin. Leave to cool completely before removing from the tin.
