Vegetable Tabbouleh .
This is a Lebanese inspired salad which uses several ingredients from our extensive Country Products range. It is a perfect recipe for these lazy summer days as it uses lots of seasonal vegetables and fresh herbs. Serve with barbecued meats, salmon and other griddled fish – it’s even perfect with sausages ! .
Serves 6 – 8.
175g Country Products Bulgar Wheat/Couscous.
3 tbsp Country Products Olive Oil.
1 tbsp Linseed Oil.
4 Tbsp Country Products Lemon Juice.
2 Garlic Cloves, very finely chopped.
Freshly Ground Sea Salt and Black Pepper
2 Large Carrots, peeled and diced..
2 Courgettes, diced.
Small head of Broccoli, in florets.
115g Peas, frozen are fine.
Small bunch of mint, finely chopped, reserving a few whole leaves to garnish.
Large bunch flat-leaved parsley, finely chopped reserving a few leaves to garnish.
225g tomatoes, skinned, stalks removed and diced.
½ cucumber, diced and skinned.
1 tbsp Country Products Golden Linseeds.
1 bunch spring onions, chopped.
Method
Put the bulgar wheat/couscous in a large bowl and cover well with warm water..
Leave for about 20 minutes to swell and soften.
Drain thoroughly, squeezing to remove excess
moisture, and place in a large serving bowl.
Mix the oils with 2 tbsp lemon juice and the garlic..
Season this dressing to taste and pour it over the bulgar/couscous. Mix well and leave for about 20 minutes
Dice the carrots, courgettes and broccoli. Steam or microwave the vegetables until al dente. .
Refresh in cold water then drain
To serve, mix the chopped mint and parsley into the salad, together with the tomatoes, the cucumber, the linseeds, the drained vegetables, most of the spring onions and the peas.. Adjust the seasoning with more salt, pepper and lemon juice, .
Garnish with the remaining tomatoes and spring onions and the reserved whole mint leaves and parsley leaves.
