TEN MINUTE XMAS PUDDING

INGREDIENTS
75g Plain flour
pinch Country Products sea salt
pinch Country Products cinnamon
pinch Country Products nutmeg
1 tsp Country Products mixed spice
25g wholemeal breadcrumbs
75g Country Products vegetarian suet
75g Country Products soft brown sugar
50g Country Products chopped mixed peel
50g Country Products glace cherries
50g Country Products currants
125g Country Products sultanas
150g Country Products raisins
50g peeled and chopped cooking apples
50g Country Products finely chopped blanched almonds
rind, zest and juice of half a lemon
zest and juice of 1 orange
2 tbsps brandy
2 medium eggs
2 tbsps black treacle
2 tbsps milk
METHOD
Place flour, salt and spices in a large mixing bowl.
Add all the remaining ingredients and beat until you have a soft dropping consistency.
Cover and refrigerate overnight.
Stir well again and place in a greased 2 pint pudding basin, cover with cling film and cook in the microwave on high for 10 mins.
Leave to stand for 10 mins before turning out.
Serve warm with brandy butter/cream/rum sauce.
