SPICED NUTS

INGREDIENTS
350g (12oz) Country Products mixed skinned nuts, such as almonds, pecans, hazelnuts
125 (4oz) Country Products mixed pumpkin and sunflower seeds
40g (1 ½ oz) butter or 45ml (3 tbsp) sunflower oil
15ml (1tbsp) Country Products curry powder/garam masala
5 ml (1 tsp) Country Products coarse sea salt
METHOD
Preheat the oven to 150C/300F/Gas 2.
Melt the butter in a roasting tin and stir in the curry powder.
Cook, stirring for 30 seconds.
Add the nuts and seeds and stir until well coated.
Roast in the oven for 30 minutes, stirring from time to time.
On removing from the oven, immediately toss the nuts with the salt.
Serve warm, or allow to cool completely and store for up to 2 weeks.
