SPICED AND ICED CHRISTMAS PUDDING

INGREDIENTS
125ml brandy or rum
75g Country Products raisins
75g Country Products sultanas
75g Country Products glace cherries
50g Country Products glace ginger
100g Country Products exotic glace/crystallised fruit ie papaya, mango etc chopped
4 tbsp sieved icing sugar
¼ tsp Country Products cinnamon
¼ tsp Country Products nutmeg
zest of 1 orange soaked in rum or cointreau
600mls double cream, whipped
600ml ready made custard
METHOD
To make the pudding, dice the fruit and soak in the brandy or rum along with the orange zest.
Mix everything else together, fold in the spices and press the mixture into a 2 pint pudding basin lined with cling film.
Freeze until firm.
Remove from the freezer and leave in the fridge to soften for 1 hour before serving.
Topping – Chocolate Ganache
INGREDIENTS
150ml double cream
150g plain chocolate
Method
Break the chocolate into pieces and place in a pan along with the cream.
Heat gently until the chocolate melts
Pour over the iced pudding just before serving.
